Meatloaf

Yield: 6-8 Servings

INGREDIENTS
2 lbs Ground Beef
1 Onion, small dice
2 Eggs
6 Garlic Cloves, grated
3 Tbsp Saucy Rascals Everyday BBQ Sauce 2 Tbsp Parsley, chopped
¾ cup Panko Breadcrumbs
⅓ cup Milk
1 tsp Dried Oregano
1 tsp Dried Basil
1 tsp Smoked Paprika
2 tsp Kosher Salt
1 tsp Black Pepper, freshly ground

GLAZE
¾ Cup Saucy Rascals Everyday BBQ Sauce 1 tsp Rice Wine Vinegar
3 Tbsp Brown Sugar 1 tsp Garlic Powder
¼ tsp Onion Powder
½ tsp Black Pepper, freshly ground
½ tsp Kosher Salt

METHOD
1. Preheat oven to 450o. Line a 9x5 inch pan with parchment paper.
2. In a large bowl, mix all meatloaf ingredients until thoroughly combined. Set the bowl in
3. Add mixture to pan and shape into loaf, pressing gently. Lower oven temperature to 375o and bake meatloaf for 45 minutes.
4. Mix all glaze ingredients in a small bowl. Spread glaze over meatloaf and return to oven for an additional 15 minutes, or until internal temperature is 155o. Rest meatloaf for 15 minutes before slicing.
