MAYO-Q Crab Cakes

Yield: 8 Servings

1 cup Mayo-Q
1 tsp Salt
2 tsp Black Pepper, freshly ground
2 Egg Whites
1 Lemon, juiced and zest
2 Tbsp Chives, chopped
2 Tbsp Thyme, picked leaves
1 lb. Jumbo Lump Crab Meat, fresh if possible
¼ cup Breadcrumbs

1. Combine Mayo-Q, salt, pepper, egg white, lemon zest and juice, chives and thyme. Fold in crab meat.
2. Form mixture into patties, press into breadcrumbs and sear in oil until golden and crisp on both sides.
