Black Garlic Teriyaki Beef Jerky

Yield: ~3 lbs. Beef Jerky

INGREDIENTS
5 lbs. flank steak
1 ½ cups Worcestershire Sauce
2 cups Saucy Rascals Black Garlic Teriyaki Sauce
3 tsp Liquid Smoke (omit if using a smoker)
½ cup Soy Sauce
3 tsp Onion Powder 3 tsp Garlic Powder
1 tsp Hatch Chili Powder
2 Tbsp Black Pepper, butcher cracked
1 Tbsp Kosher Salt, Diamon Crystal
2 Tbsp Crushed Red Pepper 4 Tbsp Dark Brown Sugar
1 ½ Tbsp Honey
2 Tbsp Maple Syrup 2 Tbsp Sesame Seeds

METHOD
1. Trim fat from beef and freeze for 30 minutes, or until firm to the touch.
2. Cut beef into¼ inch thick slices and set aside.
3. In a large bowl, combine remaining ingredients and whisk until incorporated. Add beef to bowl, toss to coat.
4. Marinate overnight.
5. Set oven (or smoker) to lowest setting, approximately 170-180F
6. Remove meat from marinade and pat dry. Lay on a baking sheet, leaving space between slices.
7. Dry for 6-7 hours, or until fully dried. Remove, and let sit for 20 minutes until cool. Store in an airtight container.
