Bacon Jam

Yield: 2 Cups

1 lb. Bacon, ground or sliced thin
¼ cup Shallots, small dice
½ cup Brown Sugar
½ cup Saucy Rascals Everyday BBQ Sauce
⅓ cup Strong Brewed Coffee

1. In a medium pan, cook bacon over medium heat until golden and crispy, remove with a slotted spoon, leaving fat in the pan.
2. Add shallots and reduce heat to low. Cook until shallots are deeply caramelized, approximately 20 minutes.
3. Combine the rest of the ingredients and cook on low, stirring frequently until mixture is homogeneous and jammy. Stir in reserved Bacon.
